emacs: drop the flycheck stack in favour of built-in flymake

Nothing ever enabled flycheck-mode, so the proselint checker and the
languagetool backend were dormant: the latter also needed a docker
container that never got past a TODO.  Emacs ships flymake and
consult-flymake is already bound, so add flymake-proselint if prose
linting is wanted again.  Removes the flycheck and flycheck-languagetool
dependencies.
