emacs: use built-in eglot, drop go-eldoc
eglot ships with Emacs 30, so :ensure pulled a redundant ELPA copy.
go-eldoc has been unmaintained since 2017 and eglot provides eldoc for
Go, so hook eglot-ensure into go-mode instead.
